Overwrite elevation service

Hello,

I would like to update the mosaic dataset source of an elevation service we published on our Portal.

How can I update/overwrite an elevation service ? There is no mention of that in the documentation:

Big questionmark as well... delete and republish is not what we want since item-id will change...
