I have an attribute table that I would like to format. I need to display the numerical values in scientific notation (ie 2.367E-02 instead of 0.02367). How can I do this, especially for multiple fields at once, in ArcGIS Pro version 2.7?

That shows how to format a field to scientific notation.
As for doing multiple fields at once, that is not currently possible. I'd recommend going to https://community.esri.com/t5/arcgis-pro-ideas/copy-number-formats-across-multiple-fields-in-fields-menu/idi-p/1023864 and adding your support by giving a kudo.
