I am looking for a way to generate a report from data collected in a Survey 123 project. I hear Data Driven pages is the way to go. If so, can someone explain this workflow?

Depending on what you are wanting as a report, there are several possible options.
Data Driven Pages enable you to create a layout/report for each survey response. Essentially, it uses a template layout and updates it for each feature as it steps through each row in the table. Without any coding, the layout can include one or more maps (say, detail/overview) and attribute information. With some python scripting to extract and maintain linkages, it can also include attachments.
Survey123's Analyze tab can provide a summary report of the surveys collected. Further work can be done by exporting to a CSV and loading into another tool, like Excel.
