When I export to CSV or Excel Spreadsheet it doesn't translate properly. It tells me Choice 1, Choice 2, not what I have entered into the survey for the answers to the questions.

The data export from a survey contains the data value stored in the database instead of the label displayed. As part of the survey publishing process, you can specify the values to store - see Publish your survey—Survey123 for ArcGIS | ArcGIS
