Brand new to Survey123 and have what may be a silly question. I'd like to rename a connection. Where is that name set?

What does connection mean? Not sure what you mean need more info.
Hi Doug,
On the startup screen of Survey123 there is a button "Manage ArcGIS Connections." When you select that, you are taken to a list of your connections. I want to know where that name is set. See attached.
