Hi. Not directly. Survey123 works against Feature Services. Feature Services do not work against File Geodatabases. Surveys are configured against a single layer within a feature service and can work with that layer and related tables and layers.
Having said this, you can schedule ETL processes (with FME or simply with some Python code) to get Survey123 data out into FGDBs.
