I tried researching this and couldn't find anything so I figured I'd ask. I know that the Signature is automatically added as an attachment after the survey has been submitted but is there a way for it not to be added under the attachments?

Signatures are stored as JPG images and thus are attachments to the submitted data. You could specify that an image/signature question should not be stored with the record when using Survey123 Connect by specifying the bind::esri:fieldType property of the question to be null, but that would mean the signature is not submitted with the data at all.
