Hello @JohnForce , in order to Start Editing your data will need to be one of the types described here.

https://desktop.arcgis.com/en/arcmap/latest/manage-data/editing-fundamentals/no-editable-layers.htm

"In ArcGIS, you can edit data from shapefiles; geodatabase feature classes; stand-alone table formats, such as INFO or .dbf; and the attribute tables of certain rasters"
