My concern is while enabling location sharing in ArcGIS Enterprise, do we need to install Geoevent server as well to manage spatio-temporal data store or we can simply configure it with portal site and it will work. Please see below excerpt taken from esri site.

However, in deployment patterns as suggested by ESRI, There is no mention of Geoevent server. Please see below image FYR.
This puts me in dilemma, that should I use it or not.

As per the excerpt from ESRI FAQ "Although both ArcGIS GeoEvent Server and ArcGIS Field Maps use the spatiotemporal big data store, GeoEvent Server is not required to use location sharing in ArcGIS Field Maps with ArcGIS Enterprise"

In order to use the Location Tracking feature within ArcGIS Enterprise, the Spatiotemporal DataStore is required. While it's traditionally used with a GeoEvent system, that's not the only use for it. Location tracking data is considered real time data, and spatiotemporal is the real time DataStore.
TLDR: Yes you need it to use the Location Tracking functionality.
For location tracking specifically you do not require an ArcGIS GeoEvent Server site, only a base enterprise deployment plus the spatiotemporal data store is needed. When needing additional capabilities associated with the spatiotemporal data store, either an ArcGIS GeoEvent or GeoAnalytics Server site is required.
