We have ArcGIS server 10.1 running on a new server. We would like to publish a map service that reads from a 9.2 SDE (oracle) geodatabase on another older server. Is this possible? Anything special I need to do to make it happen?

You'll need ArcGIS for Desktop 10.1 to publish to ArcGIS for Server 10.1. FYI: 10.1 clients are not able to connect to pre-9.3 ArcSDE geodatabases: Client and geodatabase compatibility

me,too. I successfully publish Spatial Data from ArcSDE 9.2 through ArcGIS Server 10.1; My Web Application works with ArcGIS Server 10.1 services very well, just like services in ArcGIS Server 10. I haven't got any error or warning from ArcMap when I was publishing services to ArcGIS Server 10.1.
Regarding the ability to connect from a 10.1 client to a 9.2 ArcSDE geodatabase data source: we did not block connections to 9.2 geodatabases, but it is an unsupported configuration and has not been tested/certified.
