How to get the data from a map server

Question

I need to get the population data from a map server, and create a chart for it.  My question is how do I get this data? Should I use query, or geometry? I know I need to use data binding, just no clue what method I need to use.  Is there any code sample for this? Thanks a lot!

ESRI has quite a few samples on how to query data from a map service.
Below is the URL to all their samples. I suggest looking at the "Query Task" sample specifically.
