I am having a hard time extracting an attribute table and pasting it in an excel spreadsheet. It only creates another table.

Use the Table to Excel tool Table To Excel—Conversion toolbox | ArcGIS Desktop
Paul is correct... you get a new spreadsheet and make sure you specify an *.xls since you are using a quite old version of excel
