Preparing images for mosaic

Hi all,

I have been given a series of 60+ images(JPEG) to prepare and then create a mosaic data set. I will attach an example of the scanned images. I assume I am going to have to crop every image to the same size and shape, so equal pixels on all sides etc? Also there is no spatial data within the images but ideally the aim is to be able to overlay this mosaic with modern mapping so I also need to ensure the mosaic has an assigned coordinate system etc. Can anyone guide me on all this please?
