When visualizing an attribute table, it is not possible to set the column order so that it is saved for future use.

Support for persisting field order and visibility was added in our Nov 2024 release. You can read about it here: https://www.esri.com/arcgis-blog/products/arcgis-online/data-management/manage-attachments-and-table-configurations/
