We want to start using Workforce to track work orders for asset management. However we do not want to host he layers that workforce creates on AGOL, is it possible for us to host those layers on our server?

My client works in Hybrid environment, means ArcGIS Server and ArcGIS Online.
Is it possible to configure ArcGIS online workforce, and the layers will be services in ArcGIS server stored on SDE?
I want to define DB Views based on the workforce assignment layer and other operational layers, for informative maps.

Yes,
you need ArcGIS Server, Datastore, and Portal for ArcGIS (federated with AGS)
