I have point coordinates of Origin and Destination of displaced people and dates, no number of people involved and direction.

What does your data look like?
If you had points which identified which line they would belong to, you could use
Points To Line (Data Management)—ArcGIS Pro | Documentation
If you data format is different, then there are other options
