Can I type in a note for each feature or is it limited to preset attributes?

Not entirely sure what you mean and you can always add a note attribute to the required feature class.
I’m trying to figure out how to add a field note to a feature class that I’m creating. Get it?

Not entirely sure. Is a "Field Note" a specific ESRI term or you just wish to add some text to each feature?
If "Field Note" is a specific ESRI term, then I have no idea. I use Collector via Portal and this may be an AGOL thing.
If just wanting the ability to add text, then create a new attribute called Note and assign type text.
