If you are looking for the exercise data for Getting to Know ArcGIS Pro 2.8 (the latest edition) you can find that here.
You can always visit the Esri Press page, find the book you are looking for, at the bottom click Resources and follow the link to the exercise data.
I have received a desk copy of Getting to Know ArcGIS through Vital Source. Where can I download the data used in the text?
