Another path is to just alias the field names on the layer. After all it is the layer the users are interacting with.
This will work only where the purpose of the field meets the requirements. For example you can alias the 'Name' field to be called ' APN' or 'PIN' or 'Lot Number' etc. based on the layer it is used in. Another place to configure is the display field on the layer.
If the field is missing - your solution is great and you can append any field that you find missing and than configure layers to show the correct fields (visible, order, highlight, alias).
You are also welcome to suggest which fields should be appended if you think they could apply to other local governments on Esri Arcgis Ideas | Ideas Submission Portal .

We've simply appended extra fields onto the schema of layers in the parcel fabric. The original LGIM schema is intact, so the fabric operates as expected, templates work, etc., but we have the added information stored in the appended columns.
We're also starting to use a series of relates and .lyr files for more common and repeated functions.

You do not have to use the LGIM to leverage the power of the parcel fabric. You can extend the parcel fabric using your own fields and related tables or you can edit and customize the LGIM. It will not affect the functionality available in the parcel fabric. Just one thing to note, if you dont enable the information model on your parcel fabric you wont be able to use the automated workflows that come with enabling the model. However the steps in these workflows are documented and these workflows can be implemented manually using the parcel fabric tools.
