Im editing a shapefile for land cover and am wondering how to change each individual polygon color after it is created, not the entire shapefile.

In order to modify the colours, I suggest having values that are unique in your dataset. If you have different names or codes for each feature, this will worlk. You can then use the unique symbols renderer.
