When I create a combo chart in Insights, the option to sort how the content is ordered within the chart disappears. Am I missing something?

Unfortunately you are not missing anything, except the functionality! That feature has not yet made it into Insights but rest assured we are well aware of the need for it and I am hopeful it will make it into a release soon.
