I have several different fields that are date field, but Collector only seems to allow me to enter a date from the mobile app, and autosets the time time to the current time.
Any advice?
You can configure the popup in ArcGIS Online to display both time and date field: Configure pop-ups—ArcGIS Online Help | ArcGIS
I'm aware of how to configure this in AGOL, but I'm not seeing the functionality reflected in the Collector app.
