I have created a web map using feature layers (hosted) - the map is viewable through my collector app however I would like to change how when I collect a point it solely says "New Feature" if I was a user that did not create the map I would not be able to tell the difference between each "New Feature". 

How do I rename the "New Features" to an understood label aka "Culverts" "Junctions" etc in ArcGIS Online?

In AGO's Map Viewer, you can manage the feature template if you are the owner of the layer or admin in your organization. On the Edit screen, at the bottom should be a button that says Manage. You can edit the feature template's labeling in there. This help article explains it: https://doc.arcgis.com/en/arcgis-online/manage-data/manage-feature-templates.htm
