Why does AGOL capitalize my lower case data field values?

I created a hosted feature service (with 3 layers) in ArcMap using shapefiles that have text fields of lower case values that will be used in the sentence of a pop-up. Why does AGOL capitalize the first letter of the field upon creation of the hosted feature layer? The process worked for one of the layers in the feature service but not the other two. The one that worked was a text field with length 254 and the one that did not work had a text length of 20. Work flow: MS Access data joined to ArcGIS Personal Geodatabase GIS layer > new Personal Geodatabase layer > Shapefile > AGOL Hosted Feature Service.
