Can you symbolize a polygon feature based on an attribute value instead of color fill

I am wondering if you can symbolize a poly feature based on a text value in the attribute table instead of the normal colorfills.  Does anyone know? I want the polygon to be letters ie L,M,H based on the value in the table. I Know I could drop the poly to a centroid and do it that way and change to a character symbol, but I would rather not..

Go to properties of the layer, then symbology. (I have a text field from a shapefile with A,B,C,D as values - feature class is the same process).

categories - unique values

click 'add all values' near the bottom left, this will add the set of values within that field
