it might sound as a stupid question, but I can't figure out a solution.
When I assign different symbols to different categories, how can I select or unselect some of them to be or not to be shown on the map?
Example: in the attched image, I would like to unselect a category (for example Capreolus) to not see it on the map. How can I proceed?

Can you right click > properties > symbology and uncheck the category for display from this window? You should be able to select the specific values that are chosen for unique value symbology.
Cross posting this to the ArcMap space in case the above solution is not successful.
