I have changed some of the default symbology for a few feature classes then published the map for use in Collector. Once I change the symbology using a custom expression the layer no longer draws in collector (it still displays on arcgisonline)- if I change it back to the default it works fine.

I assume you created the customer expressions using Arcade? If so, this functionality is not yet available in Collector - it is in the roadmap and there's more information here: https://community.esri.com/community/gis/applications/collector-for-arcgis/blog/2017/09/06/the-aurora-project
