I'm curious if anyone else has run into the issue of their gradient strokes not rendering properly after they close a project and come back to it later? I created a gradient stroke outline for my polygon and it was working beautifully (see locations_V6.jpg). It is two gradient strokes stacked on each other, with different offsets/thickness to achieve the look I wanted. Fast forward to the next day, I powered up Pro and the first thing I noticed is my gradient now looks choppy and broken (see gradient_error.jpg).
I have tried everything I can think of and cannot seem to replicate the working version. Any thoughts?

I would take a look at the Display section of your ArcGIS Pro settings, under Options.
First, try clearing your ArcGIS Pro cache. This can help improve performance, and display issues such as this.

If clearing the cache does not resolve the issue, I would change your Rendering Engine.
