I very much appreciate your courage, but you could start with a simple analysis of satellite imagery on land cover using images from ESRI's Living Atlas, using supervised and unsupervised classifications.
After that, you can consider studies on Lidar data and see how you can learn to use ENVI for certain image corrections if necessary.
