extract each category from the table into a separate table and then convert it to Excel using ModelBuilder

I have a table in ArcGIS Pro 3.2 that contains many fields, including a classification field with multiple categories. I want to extract each category from the table into a separate table and then convert it to Excel using ModelBuilder. Can you provide the appropriate workflow to achieve this?

maybe dump the whole thing into excel then use pivot tables? Unless it's too large of a dataset.
