save data from fields as attachment

Is it possible to save the data from some fields as a file and add it as an attachment? We have to link with other software and cannot store all fields in the standard exchange format

No. You'd need to add some middleware someplace to handle it. A script that fires based on the webhook and does the conversion or something like that.
