This is already a thing. You can create a Custom Connector for Power Automate, and it works very well.

Create an ArcGIS Survey123 connector for Microsoft Power Automate for use with ArcGIS Enterprise

EDIT: And I believe the new connectors built into PA may be replacing the Custom Connector already? I mean, not a big deal either way since the Custom Connector tends to work very well.
