Can only see 1 column - AGOL - Unable to edit in PRO

I am running into an issue with AGOL Hosted Feature Layer.

I have a layer named Hydrant that we reset the data to start a new collection process. This was last performed in April 2023. I went in today to start the process, and now I can only see one column in the data tab. There are 58 fields within this feature. When I show fields, the now visible fields as Locked.

I have tried to use GIS Pro to edit the information by using calculate field. However I get an error code 160327: A column was specified that does not exist.

Just looking for direction.
