I was wondering if it is possible to disable recent values in Field Maps? The idea being that users are not tempted by one of the recent values and instead have to choose a value from the entire list.

This is such an annoying feature. Should be an opt-in at the very least.
I don't think there is a way. I'd recommend submitting this as an idea. It might end up being an option they would consider to be set at the map level using the field maps authoring app. I'm all for having more accessibility options so that the map/form author is in control of what is available to their users.
