In the old Arc Catalog you could right-click on a FC --> Properties --> Fields tab for a quick glance. That seems to have been removed from Pro? Right now I create junk map --> drag FC into it --> load table --> fields view. Is there a faster/better method?

Right-click the FC → Design → Fields. Works from both the Catalog Pane and the View.
If you're in a Catalog View, you can also preview the table and geography, akin to the old ArcCatalog.
