Does anyone know where and how we can access a list of all the Transformers (Gallery) included with the ArcGIS Pro (FME) Data Interoperability Extension?

You can refer to the list of transformers available with ArcGIS Data Interoperability.

P.S.: It also includes Rubbersheeter among other transformers.

Yes - Same for me.I just need to ensure that Data Interoperability includes a couple specific Adjustment Transformers (Rubbersheeting etc), which are included in the FME ESRI Edition before I can recommend that we could use the Data Interoperability Extension instead.
It's FME Workbench. Been a couple years since I used it, but from my experience, you get all the transformers listed in Safe's FME Workbench Docs.
