Any clues where to look to understand why edits performed in ArcGIS Online are performed faster than in ArcGIS Pro for feature layers hosted in ArcGIS Online

It could be a network performace issue. As ArcGIS Pro is pulling data down, performing edits, and then "transmitting" those edits into the Online domain, it takes longer than ArcGIS Online performing edits in its own domain.
