Yes, you need to set the visibleLayers property on AGSDynamicMapServiceLayer.

You'll see it in the MapViewDemo sample

self.dynamicLayer.visibleLayers = [NSArray arrayWithObjects:[NSNumber numberWithInt:2], nil];
