I have just installed the Trial version of 10.5, and would like to know where I can download the offline help installer for Pro?

An ArcGIS Pro Offline Help Documentation comes alongwith subscribed license of ArcGIS Pro which can be downloaded from organization account of My Esri.
You could check with your local Esri distributor if a copy of offline help documentation (usually used for working on ArcGIS Pro in disconnected environment) could be made available for you.
