Customizing the Ribbon in Pro

Had a couple of quick questions about customizing the ribbon in ArcGIS Pro.

Using the Customize the Ribbon interface I've found in that if I remove an item (the Analysis tab for instance) from the ribbon in I cannot add it again. I have the option to reset all customizations but the option to Add-> an item is always grayed out. Am I missing something here?

Would also like to set the customization by the project, not the machine. Can this be done at the project level?

Using ArcGIS Pro 1.1.1

perhaps behaving as planned Customize the user interface—ArcGIS Pro | ArcGIS for Desktop

perhaps copying to a new tab with what you want rather than removing the whole tab
