In ArcGIS Server 10 Which version of JavaScript api could I use？
Although you will have to be aware that some of the properties and/or methods of the different classes may not work with ArcGIS Server 10.0. For example, the FeatureLayer's maxRecordCount property requires 10.1
All of them. The API is not dependent on your version of ArcGIS Server.
