Uninstalled reinstalled no patch xy data works again
Use
Excel To Table (Conversion)—ArcGIS Pro | Documentation
Something is probably up with the excel file or maybe it is use by excel.
Adding excel directly is a shortcut, but not the best way of using data from that source
