Is editing a Geometric Network something not yet available? Everything is grayed out.

No, there is not support for editing or tracing against a geometric network with the first release of ArcGIS Pro. You can see and query the network layers, but that is it.
We are working on expanding the capabilities for modeling utility and telecom networks and plan on making that available in a future release of ArcGIS Pro.
