I would like to set up an email response after our participants finish the survey.
I have read a bunch of documentation but I would like to know which solution is best.

Do you mean you want one response for certain responses and a different email for different responses? If so and you have access to PowerAutomate or Make - I do this all the time by utilizing the "Condition" option where you say "if this feature attribute = this" and then it provides you the option to customize the response if true or false and then design the emails for each scenario.
