I would like to fill a field with the label that describes a postal code after obtaining that data from the geopoint requested in a survey.

Please check out this Esri Community blog on reverse geocoding in Survey123, using pulldata("@geopoint",${location},"reversegeocode.address.Postal") should allow you to extract the postal code.
