My survey folder in ArcGIS online disappeared (I swear I didn't delete it.) All the survey's still exist in the
C:\Users\xyz\ArcGIS\My Survey Designs - is there anyway to publish them from there?
If they still exist on your local machine, then you should be able to republish them from Survey123 Connect. However, it does seem like strange behavior if you didn't delete them yourself. Have you tried getting in contact with Esri Support?
