We've created a survey with the ability to create polylines in a map. How can you change the color of the polylines?

You can control the line width and line colour for geotrace and geoshape questions (and also fill colour for geoshape) in the Survey123 field app and Survey123 Connect using parameters in the body::esri:style column in your XLSForm. Please see the Style options documentation for more details.
