I'd like to add a white border to each segment of the bar to make sure people can see the different categories. How can I do that?

I don't think that you can add a white border unless a segment of the bar graph is white, but even then only that segment will have a white border. You might be able to distinguish the segments by tweaking the Fill Opacity, Line Opacity, and Line Thickness. I've attached 2 screenshots showing the different opacity settings I used and the results of those settings.
