I have a related table in my enterprise geodatabase, that has a guid field and a field that is url's to images on our server. Can I convert this table to create attachments for a feature class, or all my feature classes?
Yes. So you can accomplish this by using a python script or running the add attachments tool.

I take it then I would have to create a match table? When you create a match table though, all the images/url's have to be in one folder, correct? I have all my files stored under many subfolders: see attached image...

It should not matter if the images/url's are in subfolders (I believe anyways).
