When creating a workforce project, the dispatcher and worker maps are created for you. Then you need to add content. Rather than managing multiple maps, is there a way to replace one/both of these maps with a map already created?

This is not currently supported. It is in our backlog but has not been assigned to a release.
There is a way to do this - but involves editing the json of the Workforce project item. I wouldn't recommend doing this, unless you're running into a critical showstopper with a workflow that is preventing you from moving forward.
